  • Green beans - 100 grams
  • Chickpeas (canned, drained) - 240 grams
  • Red onion - 1 small
  • Black olives (pitted) - 60 grams
  • Fresh basil leaves - 10 grams
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and prepare all vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and slice the red onion thinly.
  2. Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes until tender-crisp. Drain and immediately rinse under cold water to stop the cooking process.
  3. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, green beans, chickpeas, red onion, and black olives.
  4. In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and toss gently to combine all ingredients.
  6. Garnish with fresh basil leaves before serving.
