- Green beans - 100 grams
- Chickpeas (canned, drained) - 240 grams
- Red onion - 1 small
- Black olives (pitted) - 60 grams
- Fresh basil leaves - 10 grams
- Olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and prepare all vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and slice the red onion thinly.
- Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes until tender-crisp. Drain and immediately rinse under cold water to stop the cooking process.
- In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, green beans, chickpeas, red onion, and black olives.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss gently to combine all ingredients.
