- Green beans - 150 grams
- Cherry tomatoes - 200 grams
- Zucchini - 1 medium (about 200 grams)
- Red bell pepper - 1 medium
- Olive oil - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
- Canned tuna - 1 can (about 150 grams, drained)
- Hard-boiled eggs - 2
- Black olives - 50 grams
- Fresh basil - a handful
- Lemon juice - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- Trim the ends of the green beans and cut the zucchini into thick slices.
- Cut the red bell pepper into quarters and toss all the vegetables (green beans, zucchini, cherry tomatoes, and bell pepper) in a bowl with olive oil, salt, and black pepper.
- Place the vegetables on the grill and cook for about 10-12 minutes, turning occasionally until they are tender and slightly charred.
- While the vegetables are grilling, prepare the hard-boiled eggs: Place them in boiling water for 9-10 minutes, then cool under cold running water and peel.
- Once the vegetables are grilled, remove them from the grill and arrange them on a plate.
- Add the drained tuna, sliced hard-boiled eggs, and black olives on top of the grilled vegetables.
- Drizzle with lemon juice and garnish with fresh basil leaves before serving.
