Ingredients

  • Frisée lettuce - 100g
  • Red potatoes - 200g
  • Cherry tomatoes - 100g
  • Red onion - 50g
  • Olive oil - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Maple syrup - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and cube the red potatoes into bite-sized pieces.
  3. Toss the cubed potatoes with 1 tablespoon of olive oil, salt, and black pepper, then spread them on a baking sheet.
  4. Roast the potatoes in the preheated oven for 20-25 minutes, or until golden and crispy, turning once halfway through.
  5. While the potatoes are roasting, rinse the frisée lettuce and tear it into bite-sized pieces.
  6. Slice the cherry tomatoes in half and thinly slice the red onion.
  7. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and black pepper to create the vinaigrette.
  8. Once the potatoes are done, remove them from the oven and let them cool slightly.
  9. In a large bowl, combine the frisée lettuce, roasted potatoes, cherry tomatoes, red onion, and chopped parsley.
  10. Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.
