- Frisée lettuce - 100g
- Red potatoes - 200g
- Cherry tomatoes - 100g
- Red onion - 50g
- Olive oil - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Maple syrup - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wash and cube the red potatoes into bite-sized pieces.
- Toss the cubed potatoes with 1 tablespoon of olive oil, salt, and black pepper, then spread them on a baking sheet.
- Roast the potatoes in the preheated oven for 20-25 minutes, or until golden and crispy, turning once halfway through.
- While the potatoes are roasting, rinse the frisée lettuce and tear it into bite-sized pieces.
- Slice the cherry tomatoes in half and thinly slice the red onion.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and black pepper to create the vinaigrette.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- In a large bowl, combine the frisée lettuce, roasted potatoes, cherry tomatoes, red onion, and chopped parsley.
- Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.
