Ingredients

  • Frisée lettuce - 100g
  • Radicchio - 50g
  • Cherry tomatoes - 100g
  • Smoked tempeh - 100g
  • Olive oil - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Maple syrup - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chopped fresh parsley - 1 tablespoon

Steps

  1. Begin by slicing the smoked tempeh into thin strips.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and add the tempeh strips. Sauté for about 5-7 minutes until golden and crispy, then set aside.
  3. While the tempeh cooks, wash and tear the frisée and radicchio into bite-sized pieces. Halve the cherry tomatoes.
  4. In a small bowl, whisk together the remaining olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and black pepper to create the vinaigrette.
  5. In a large bowl, combine the frisée, radicchio, cherry tomatoes, and sautéed tempeh. Drizzle with the vinaigrette and toss gently to coat.
  6. Serve immediately, garnished with chopped fresh parsley.
