- Frisée lettuce - 100g
- Radicchio - 50g
- Cherry tomatoes - 100g
- Smoked tempeh - 100g
- Olive oil - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Maple syrup - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chopped fresh parsley - 1 tablespoon
Steps
- Begin by slicing the smoked tempeh into thin strips.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and add the tempeh strips. Sauté for about 5-7 minutes until golden and crispy, then set aside.
- While the tempeh cooks, wash and tear the frisée and radicchio into bite-sized pieces. Halve the cherry tomatoes.
- In a small bowl, whisk together the remaining olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and black pepper to create the vinaigrette.
- In a large bowl, combine the frisée, radicchio, cherry tomatoes, and sautéed tempeh. Drizzle with the vinaigrette and toss gently to coat.
- Serve immediately, garnished with chopped fresh parsley.
