- Firm tofu - 200 grams

- Dijon mustard - 1 teaspoon
- Honey - 1 teaspoon
- Mixed salad greens - 100 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Red onion - 1/4, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu to remove excess water for about 15 minutes, then cut it into cubes.
- In a bowl, mix olive oil, white wine vinegar, Dijon mustard, honey, salt, and black pepper to create a marinade.
- Add the tofu cubes to the marinade and let them soak for at least 10 minutes.
- In a non-stick skillet, heat a little olive oil over medium heat and sauté the marinated tofu until golden brown, about 5-7 minutes.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and parsley.
- Once the tofu is cooked, place it on top of the salad mixture.
- Drizzle any remaining marinade over the salad, toss gently, and serve immediately.
