Ingredients

  • Fresh salmon fillet - 200 grams

  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium, diced
  • Red onion - 1/4, thinly sliced
  • Capers - 1 tablespoon
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Season the salmon fillet with salt and pepper, then place it on a baking tray lined with parchment paper.
  3. Bake the salmon for 15 minutes or until it flakes easily with a fork.
  4. While the salmon is baking, prepare the salad by combining the mixed greens, diced cucumber, and sliced red onion in a large bowl.
  5. Halve the cherry tomatoes and add them to the salad along with the capers.
  6. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
  7. Once the salmon is cooked, remove it from the oven and let it cool slightly before flaking it into large pieces.
  8. Add the flaked salmon to the salad and drizzle with the dressing.
  9. Toss gently to combine and serve immediately.
