Salade de Riz
Salade de Riz is a vibrant French salad that combines fluffy rice with fresh vegetables and a zesty dressing, making it a perfect refreshing dish. This Halal version is not only tasty but also nutritious, ideal for a light meal or as a side dish.

Ingredients
- Basmati rice - 100 grams
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red bell pepper - 1 medium, diced
- Green onion - 2, chopped
- Fresh parsley - 20 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 200 ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the water is absorbed.
- While the rice is cooking, prepare the vegetables: dice the cucumber, red bell pepper, and halve the cherry tomatoes. Chop the green onions and parsley.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red bell pepper, green onions, and parsley.
- Once the rice is done, fluff it with a fork and let it cool for a few minutes before adding it to the bowl with the vegetables.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Pour the dressing over the rice and vegetable mixture and toss gently to combine all the ingredients. If using, sprinkle the crumbled feta cheese on top.
- Serve immediately or refrigerate for 30 minutes for a chilled salad.
