Ingredients

  • Quinoa - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, finely diced
  • Black olives - 50 grams, pitted and sliced
  • Fresh parsley - 20 grams, chopped
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh sieve.
  2. In a medium saucepan, combine the rinsed quinoa with 300 ml of water and a pinch of salt. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  4. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely diced red onion, sliced black olives, chopped parsley, and chopped basil.
  5. Fluff the cooked quinoa with a fork and add it to the bowl with the vegetables.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the quinoa and vegetable mixture.
  7. Toss everything together gently until well combined. Adjust seasoning if necessary.
  8. Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing cold salad.
