Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Cucumber - 100 grams, diced
  • Cherry tomatoes - 150 grams, halved
  • Red bell pepper - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Olive oil - 30 ml
  • Lemon juice - 15 ml
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, combine 100 grams of quinoa and 250 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed.
  3. While the quinoa is cooking, prepare the vegetables: dice the cucumber, halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper to create the dressing.
  5. Once the quinoa is cooked, remove it from heat and let it cool slightly before fluffing it with a fork.
  6. In a large mixing bowl, combine the cooked quinoa with the prepared vegetables and dressing, tossing gently to combine.
  7. Serve the salad chilled or at room temperature, garnished with additional parsley if desired.
