- Quinoa - 100 grams
- Water - 250 ml
- Cucumber - 100 grams, diced
- Cherry tomatoes - 150 grams, halved
- Red bell pepper - 100 grams, diced
- Red onion - 50 grams, finely chopped
- Fresh parsley - 20 grams, chopped
- Olive oil - 30 ml
- Lemon juice - 15 ml
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a saucepan, combine 100 grams of quinoa and 250 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, prepare the vegetables: dice the cucumber, halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper to create the dressing.
- Once the quinoa is cooked, remove it from heat and let it cool slightly before fluffing it with a fork.
- In a large mixing bowl, combine the cooked quinoa with the prepared vegetables and dressing, tossing gently to combine.
- Serve the salad chilled or at room temperature, garnished with additional parsley if desired.
