- Cherry tomatoes - 100 grams
- Cucumber - 1 medium (approximately 150 grams)
- Red onion - 50 grams
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Preheat a grill or grill pan over medium-high heat.
- Season the chicken breast with salt, black pepper, and a tablespoon of olive oil.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink inside. Remove from heat and let it rest for 5 minutes.
- While the chicken is resting, prepare the salad by placing the mixed salad greens in a large bowl.
- Halve the cherry tomatoes and slice the cucumber and red onion thinly. Add them to the bowl with the greens.
