  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium (approximately 150 grams)
  • Red onion - 1/4 medium (approximately 30 grams)
  • Feta cheese - 50 grams
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill or a skillet over medium heat.
  2. Season the chicken breast with salt and pepper, then grill or cook in the skillet for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  3. Remove the chicken from the heat and let it rest for 5 minutes before slicing it into strips.
  4. While the chicken is resting, prepare the salad by washing and drying the mixed salad greens.
  5. Cut the cherry tomatoes in half and slice the cucumber and red onion thinly.
  6. In a large salad bowl, combine the salad greens, cherry tomatoes, cucumber, and red onion.
  7. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Add the sliced chicken on top of the salad, followed by crumbled feta cheese and chopped parsley.
