Ingredients

  • 500g new potatoes
  • 50g green beans, trimmed
  • 1 small red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Wash the new potatoes and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and let cool.
  2. While the potatoes are cooking, bring a small pot of water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and cool under cold water.
  3. In a large bowl, combine the chopped red onion, parsley, and chives.
  4. Once the potatoes are cool enough to handle, cut them into bite-sized pieces and add them to the bowl with the herbs and onion.
  5. Add the blanched green beans to the bowl.
  6. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to create the dressing.
  7. Pour the dressing over the potato and bean mixture, gently tossing to combine everything evenly. Adjust seasoning if necessary.
  8. Serve the salad at room temperature or chilled.
