- 500g new potatoes
- 50g green beans, trimmed
- 1 small red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- Salt - to taste
- Pepper - to taste
Steps
- Wash the new potatoes and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and let cool.
- While the potatoes are cooking, bring a small pot of water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and cool under cold water.
- In a large bowl, combine the chopped red onion, parsley, and chives.
- Once the potatoes are cool enough to handle, cut them into bite-sized pieces and add them to the bowl with the herbs and onion.
- Add the blanched green beans to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to create the dressing.
- Pour the dressing over the potato and bean mixture, gently tossing to combine everything evenly. Adjust seasoning if necessary.
- Serve the salad at room temperature or chilled.
