- New potatoes - 400 grams
- Cherry tomatoes - 150 grams
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Olive oil - 3 tablespoons
- Red wine vinegar - 2 tablespoons
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash the new potatoes thoroughly and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes or until tender.
- While the potatoes are cooking, prepare the dressing by whisking together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper in a bowl.
- Once the potatoes are cooked, drain them and let them cool slightly. When cool enough to handle, cut them into quarters.
