Ingredients

  • New potatoes - 400 grams
  • Cherry tomatoes - 150 grams
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the new potatoes thoroughly and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes or until tender.
  2. While the potatoes are cooking, prepare the dressing by whisking together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper in a bowl.
  3. Once the potatoes are cooked, drain them and let them cool slightly. When cool enough to handle, cut them into quarters.
  4. In a large mixing bowl, combine the quartered potatoes, diced cucumber, halved cherry tomatoes, chopped red onion, and fresh parsley.
