- Red bell pepper - 1 medium
- Yellow bell pepper - 1 medium
- Green bell pepper - 1 medium
- Extra virgin olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh basil - 10 grams, chopped
- Fresh parsley - 10 grams, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 220°C (428°F).
- Wash the bell peppers and cut them in half lengthwise, removing the seeds and stems.
- Place the bell pepper halves cut-side down on a baking sheet lined with parchment paper.
- Roast the peppers in the preheated oven for 20-25 minutes, or until the skins are blistered and charred.
- Remove the peppers from the oven and place them in a bowl, covering it with plastic wrap for 10 minutes to steam.
- Once cooled, peel off the charred skins and slice the peppers into strips.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper.
- In a mixing bowl, combine the roasted bell pepper strips with the chopped basil and parsley.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or let it marinate in the fridge for 15 minutes for enhanced flavors.
