Ingredients

  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Green bell pepper - 1 medium
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams, chopped
  • Fresh parsley - 10 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Wash the bell peppers and cut them in half lengthwise, removing the seeds and stems.
  3. Place the bell pepper halves cut-side down on a baking sheet lined with parchment paper.
  4. Roast the peppers in the preheated oven for 20-25 minutes, or until the skins are blistered and charred.
  5. Remove the peppers from the oven and place them in a bowl, covering it with plastic wrap for 10 minutes to steam.
  6. Once cooled, peel off the charred skins and slice the peppers into strips.
  7. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper.
  8. In a mixing bowl, combine the roasted bell pepper strips with the chopped basil and parsley.
  9. Drizzle the dressing over the salad and toss gently to combine.
  10. Serve immediately or let it marinate in the fridge for 15 minutes for enhanced flavors.
