Ingredients

  • Red Bell Pepper - 1 large
  • Yellow Bell Pepper - 1 large
  • Green Bell Pepper - 1 large
  • Red Onion - 1 small, thinly sliced
  • Garlic - 1 clove, minced
  • Fresh Parsley - 2 tablespoons, chopped
  • Olive Oil - 3 tablespoons
  • Red Wine Vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and slice the bell peppers in half, removing the seeds and stems.
  3. Place the halved bell peppers on a baking sheet, cut side down, and roast in the oven for about 20 minutes, or until the skins are blistered and charred.
  4. Remove the peppers from the oven and cover them with a clean kitchen towel for 10 minutes to steam, which will make peeling easier.
  5. After steaming, peel the skins off the peppers and cut them into strips.
  6. In a large bowl, combine the roasted pepper strips, sliced red onion, minced garlic, and chopped parsley.
  7. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Let the salad sit for at least 10 minutes to allow the flavors to meld before serving.
