- Red Bell Pepper - 1 large
- Yellow Bell Pepper - 1 large
- Green Bell Pepper - 1 large
- Red Onion - 1 small, thinly sliced
- Garlic - 1 clove, minced
- Fresh Parsley - 2 tablespoons, chopped
- Olive Oil - 3 tablespoons
- Red Wine Vinegar - 1 tablespoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and slice the bell peppers in half, removing the seeds and stems.
- Place the halved bell peppers on a baking sheet, cut side down, and roast in the oven for about 20 minutes, or until the skins are blistered and charred.
- Remove the peppers from the oven and cover them with a clean kitchen towel for 10 minutes to steam, which will make peeling easier.
- After steaming, peel the skins off the peppers and cut them into strips.
- In a large bowl, combine the roasted pepper strips, sliced red onion, minced garlic, and chopped parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for at least 10 minutes to allow the flavors to meld before serving.
