Ingredients

  • Leeks - 200 grams
  • Cherry tomatoes - 100 grams

  • White wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Trim the roots and dark green tops from the leeks, then slice them lengthwise and rinse thoroughly under cold water to remove any dirt.
  2. Cut the cleaned leeks into 1 cm pieces and place them in a pot of boiling salted water. Cook for 5-7 minutes until tender, then drain and let cool.
  3. While the leeks cool, halve the cherry tomatoes and place them in a mixing bowl.
  4. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
  5. Once the leeks have cooled, add them to the bowl with the cherry tomatoes and parsley. Pour the vinaigrette over the salad and toss gently to combine.
  6. Serve immediately or refrigerate for 15 minutes to enhance the flavors before serving.
