Steps
- Trim the roots and dark green tops from the leeks, then slice them lengthwise and rinse thoroughly under cold water to remove any dirt.
- Cut the cleaned leeks into 1 cm pieces and place them in a pot of boiling salted water. Cook for 5-7 minutes until tender, then drain and let cool.
- While the leeks cool, halve the cherry tomatoes and place them in a mixing bowl.
- In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
- Once the leeks have cooled, add them to the bowl with the cherry tomatoes and parsley. Pour the vinaigrette over the salad and toss gently to combine.
