Ingredients

  • Parsnips - 200 grams
  • Mixed salad greens (such as arugula and spinach) - 100 grams
  • Cherry tomatoes - 100 grams
  • Walnuts - 30 grams
  • Olive oil - 2 tablespoons
  • White wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel the parsnips and cut them into thin matchsticks or julienne.
  2. Bring a pot of salted water to a boil and add the parsnips. Blanch for about 5 minutes until tender but still crisp.
  3. Drain the parsnips and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain again.
  4. In a large bowl, combine the mixed salad greens, blanched parsnips, and halved cherry tomatoes.
  5. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey, salt, and black pepper to create the vinaigrette.
  6. Pour the vinaigrette over the salad and toss gently to combine.
  7. Chop the walnuts coarsely and sprinkle them over the top of the salad before serving.
