- Parsnips - 200 grams
- Mixed salad greens (such as arugula and spinach) - 100 grams
- Cherry tomatoes - 100 grams
- Walnuts - 30 grams
- Olive oil - 2 tablespoons
- White wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Honey - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Peel the parsnips and cut them into thin matchsticks or julienne.
- Bring a pot of salted water to a boil and add the parsnips. Blanch for about 5 minutes until tender but still crisp.
- Drain the parsnips and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain again.
- In a large bowl, combine the mixed salad greens, blanched parsnips, and halved cherry tomatoes.
- In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey, salt, and black pepper to create the vinaigrette.
- Pour the vinaigrette over the salad and toss gently to combine.
- Chop the walnuts coarsely and sprinkle them over the top of the salad before serving.
