Ingredients
- Green or black lentils - 150 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red onion - 1/2, finely chopped
- Cherry tomatoes - 100 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Rinse the lentils under cold water and drain them.
- In a medium pot, combine the lentils with 500 ml of water and a pinch of salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer for 20 minutes, or until the lentils are tender but not mushy. Drain and set aside to cool.
- While the lentils are cooking, prepare the vegetables: dice the carrot, celery, and finely chop the red onion and parsley. Halve the cherry tomatoes.
- In a large bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
- Add the cooled lentils, diced carrot, celery, red onion, cherry tomatoes, and parsley to the bowl with the vinaigrette. Toss gently to combine.
- If desired, sprinkle crumbled feta cheese on top before serving.
- Serve the salad at room temperature or chilled.
