Ingredients

  • Green or black lentils - 150 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red onion - 1/2, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Rinse the lentils under cold water and drain them.
  2. In a medium pot, combine the lentils with 500 ml of water and a pinch of salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and simmer for 20 minutes, or until the lentils are tender but not mushy. Drain and set aside to cool.
  4. While the lentils are cooking, prepare the vegetables: dice the carrot, celery, and finely chop the red onion and parsley. Halve the cherry tomatoes.
  5. In a large bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
  6. Add the cooled lentils, diced carrot, celery, red onion, cherry tomatoes, and parsley to the bowl with the vinaigrette. Toss gently to combine.
  7. If desired, sprinkle crumbled feta cheese on top before serving.
  8. Serve the salad at room temperature or chilled.
