Ingredients

  • Green beans - 200 grams
  • Cherry tomatoes - 150 grams
  • Almonds (sliced) - 30 grams
  • Red onion (thinly sliced) - 1/4 medium onion
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Bring a pot of salted water to a boil. Add the green beans and cook for about 5 minutes until tender-crisp.
  2. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 2 minutes, then drain again.
