Ingredients
- Green beans - 200 grams
- Cherry tomatoes - 150 grams
- Almonds (sliced) - 30 grams
- Red onion (thinly sliced) - 1/4 medium onion
- Extra virgin olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Garlic (minced) - 1 clove
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Bring a pot of salted water to a boil. Add the green beans and cook for about 5 minutes until tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 2 minutes, then drain again.
- In a dry skillet over medium heat, toast the sliced almonds for about 3-4 minutes, stirring frequently until golden brown. Remove from heat and set aside.
- In a large bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
- Add the cooled green beans, cherry tomatoes, sliced red onion, and toasted almonds to the bowl with the dressing. Toss gently to coat all ingredients evenly.
- Sprinkle the fresh parsley over the salad and serve immediately or chill for 15 minutes in the refrigerator for enhanced flavors.
