- Frisée lettuce - 150 grams
- Eggs - 2 large
- Bacon lardons - 100 grams
- Shallot - 1 small, finely chopped
- Dijon mustard - 1 teaspoon
- Red wine vinegar - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh chives - 1 tablespoon, chopped
Steps
- In a skillet over medium heat, cook the bacon lardons until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.
- In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and black pepper to create the vinaigrette.
- Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
- Meanwhile, wash and dry the frisée lettuce, then place it in a large bowl. Add the chopped shallot and half of the vinaigrette, tossing to combine.
- Divide the frisée salad between two plates. Top each with the crispy bacon lardons and a poached egg. Drizzle the remaining vinaigrette on top and sprinkle with fresh chives before serving.
