Ingredients

  • Frisée lettuce - 150 grams
  • Eggs - 2 large
  • Bacon lardons - 100 grams
  • Shallot - 1 small, finely chopped
  • Dijon mustard - 1 teaspoon
  • Red wine vinegar - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh chives - 1 tablespoon, chopped

Steps

  1. In a skillet over medium heat, cook the bacon lardons until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.
  2. In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and black pepper to create the vinaigrette.
  3. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
  4. Meanwhile, wash and dry the frisée lettuce, then place it in a large bowl. Add the chopped shallot and half of the vinaigrette, tossing to combine.
  5. Divide the frisée salad between two plates. Top each with the crispy bacon lardons and a poached egg. Drizzle the remaining vinaigrette on top and sprinkle with fresh chives before serving.
