Ingredients

  • Fresh fava beans - 200 grams (shelled weight)
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, finely chopped
  • Cucumber - 100 grams, diced
  • Fresh parsley - 20 grams, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and add the fava beans. Cook for 3-5 minutes until tender, then drain and rinse under cold water to stop cooking.
  2. Once cooled, remove the outer skin from the fava beans to reveal the bright green beans inside.
  3. In a large bowl, combine the fava beans, cherry tomatoes, red onion, cucumber, and parsley.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
  5. Pour the vinaigrette over the salad and gently toss to combine all ingredients evenly.
  6. Serve immediately, or chill for 15 minutes to enhance the flavors.
