- Cucumber - 100 grams, diced
- Fresh parsley - 20 grams, chopped
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and add the fava beans. Cook for 3-5 minutes until tender, then drain and rinse under cold water to stop cooking.
- Once cooled, remove the outer skin from the fava beans to reveal the bright green beans inside.
- In a large bowl, combine the fava beans, cherry tomatoes, red onion, cucumber, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
- Pour the vinaigrette over the salad and gently toss to combine all ingredients evenly.
