Ingredients

  • Mixed salad greens - 100 grams
  • Goat cheese (chèvre) - 100 grams
  • Baguette - 1 small (about 50 grams)
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Walnuts - 30 grams, roughly chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the baguette into 1 cm thick slices and arrange them on a baking sheet.
  3. Drizzle olive oil over the baguette slices and bake for about 5-7 minutes until golden and crisp.
  4. While the bread is toasting, prepare the salad by combining the mixed greens, walnuts, and minced garlic in a large bowl.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper to create the vinaigrette.
  6. Once the baguette slices are toasted, place the goat cheese on top of each slice and return to the oven for an additional 5 minutes until the cheese is warm and slightly melted.
  7. Drizzle the vinaigrette over the salad and toss gently to coat.
  8. Divide the salad onto two plates and top with the warm goat cheese toasts.
