Ingredients

  • chestnuts - 200 grams

  • cherry tomatoes - 100 grams
  • red onion - 1 small, thinly sliced
  • goat cheese - 50 grams, crumbled
  • walnuts - 30 grams, roughly chopped
  • olive oil - 2 tablespoons
  • balsamic vinegar - 1 tablespoon
  • honey - 1 teaspoon
  • salt - to taste
  • black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the chestnuts with an 'X' on the flat side and place them on a baking tray.
  3. Roast the chestnuts in the preheated oven for about 20 minutes, or until the skins start to peel back and the nuts are tender.
  4. Remove the chestnuts from the oven and let them cool slightly. Peel the chestnuts while they are still warm.
  5. In a large bowl, combine the mixed salad greens, sliced cherry tomatoes, and red onion.
  6. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper to create the vinaigrette.
  7. Add the peeled chestnuts, walnuts, and crumbled goat cheese to the salad bowl.
