Ingredients

  • Duck breast - 200 grams
  • Mixed salad greens (arugula, spinach, frisée) - 150 grams
  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Walnuts - 30 grams, chopped
  • Goat cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a skillet over medium heat. Score the skin of the duck breast in a crosshatch pattern and season with salt and pepper.
  2. Place the duck breast skin-side down in the skillet and cook for about 6-8 minutes until the skin is crispy and golden brown. Flip and cook for another 4-5 minutes for medium-rare.
  3. Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
  4. In a large bowl, combine the mixed salad greens, sliced cucumber, cherry tomatoes, and red onion.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  6. Add the sliced duck breast on top of the salad, sprinkle with walnuts and crumbled goat cheese, and drizzle with the dressing.
  7. Toss gently to combine and serve immediately.
