- Beets - 2 medium (about 300g)
- Mixed salad greens - 100g
- Goat cheese - 50g
- Walnuts - 30g
- Olive oil - 2 tablespoons (30ml)
- Apple cider vinegar - 1 tablespoon (15ml)
- Honey - 1 teaspoon (5g)
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Wash the beets thoroughly and wrap each one in aluminum foil. Place them on a baking sheet and roast in the preheated oven for 45-50 minutes, or until tender when pierced with a fork.
- While the beets are roasting, prepare the vinaigrette by whisking together the olive oil, apple cider vinegar, honey, salt, and black pepper in a small bowl.
- Once the beets are cooked, remove them from the oven, unwrap the foil, and let them cool for a few minutes. Then peel the skins off using your hands or a paper towel.
- Slice the beets into thin rounds or wedges and set aside.
- In a large bowl, combine the mixed salad greens and the sliced beets. Drizzle with the vinaigrette and toss gently to combine.
- Crumble the goat cheese over the salad and sprinkle with walnuts.
- Serve immediately, garnished with additional black pepper if desired.
