Ingredients

  • Beets - 2 medium (about 300g)
  • Mixed salad greens - 100g
  • Goat cheese - 50g
  • Walnuts - 30g
  • Olive oil - 2 tablespoons (30ml)
  • Apple cider vinegar - 1 tablespoon (15ml)
  • Honey - 1 teaspoon (5g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the beets thoroughly and wrap each one in aluminum foil. Place them on a baking sheet and roast in the preheated oven for 45-50 minutes, or until tender when pierced with a fork.
  3. While the beets are roasting, prepare the vinaigrette by whisking together the olive oil, apple cider vinegar, honey, salt, and black pepper in a small bowl.
  4. Once the beets are cooked, remove them from the oven, unwrap the foil, and let them cool for a few minutes. Then peel the skins off using your hands or a paper towel.
  5. Slice the beets into thin rounds or wedges and set aside.
  6. In a large bowl, combine the mixed salad greens and the sliced beets. Drizzle with the vinaigrette and toss gently to combine.
  7. Crumble the goat cheese over the salad and sprinkle with walnuts.
  8. Serve immediately, garnished with additional black pepper if desired.
