  • Walnuts - 30 grams
  • Mixed salad greens - 100 grams
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beets in aluminum foil and roast them in the oven for about 30-35 minutes, or until tender when pierced with a fork.
  3. Once the beets are cooked, allow them to cool slightly, then peel off the skins and slice them into wedges.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to make the dressing.
