  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, sliced
  • Red onion - 1/4 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Start by seasoning the beef sirloin with salt and black pepper. Preheat a skillet over medium-high heat and add a tablespoon of olive oil.
  2. Once the oil is hot, sear the beef for about 3-4 minutes on each side for medium-rare, or until your desired doneness. Remove from the skillet and let it rest for 5 minutes.
  3. While the beef is resting, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  4. In a small bowl, whisk together the remaining olive oil, balsamic vinegar, Dijon mustard, and a pinch of salt and pepper to create the vinaigrette.
  5. Slice the rested beef thinly against the grain. Add the beef slices to the salad bowl and drizzle with the vinaigrette. Toss gently to combine.
