Steps
- Start by seasoning the beef sirloin with salt and black pepper. Preheat a skillet over medium-high heat and add a tablespoon of olive oil.
- Once the oil is hot, sear the beef for about 3-4 minutes on each side for medium-rare, or until your desired doneness. Remove from the skillet and let it rest for 5 minutes.
- While the beef is resting, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
- In a small bowl, whisk together the remaining olive oil, balsamic vinegar, Dijon mustard, and a pinch of salt and pepper to create the vinaigrette.
- Slice the rested beef thinly against the grain. Add the beef slices to the salad bowl and drizzle with the vinaigrette. Toss gently to combine.
