  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Powdered sugar - for dusting (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, baking powder, and salt, stirring until well mixed.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls, then flatten them gently into discs.
  6. Place the discs on the prepared baking sheet, leaving some space between each cookie.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Once cooled, dust with powdered sugar if desired before serving.
