Ingredients

  • Almond flour - 100g
  • Coconut oil - 30g, melted
  • Honey - 30g
  • Vanilla extract - 1 tsp
  • Sea salt - 1/4 tsp
  • Baking soda - 1/4 tsp
  • Chopped walnuts - 20g

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, baking soda, and sea salt.
  3. In another bowl, mix the melted coconut oil, honey, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
  5. Fold in the chopped walnuts until evenly distributed.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each scoop slightly with the back of a fork or your fingers to form discs.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
