Ingredients

  • Whole wheat flour - 100g
  • Almond flour - 30g
  • Unsalted butter, softened - 50g
  • Coconut sugar - 30g
  • Egg yolk - 1 large
  • Vanilla extract - 1 tsp
  • Sea salt - 1/4 tsp
  • Baking powder - 1/2 tsp

Steps

  1. Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and coconut sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract to the butter mixture and mix until well combined.
  4. In a separate bowl, whisk together the whole wheat flour, almond flour, baking powder, and sea salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 15 minutes.
  7. Roll out the chilled dough to about 1/2 inch thick on a floured surface.
  8. Cut out desired shapes using cookie cutters and place them on the prepared baking sheet.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  10. Allow the Sablé Breton to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
