- Whole wheat flour - 100g
- Almond flour - 30g
- Unsalted butter, softened - 50g
- Coconut sugar - 30g
- Egg yolk - 1 large
- Vanilla extract - 1 tsp
- Sea salt - 1/4 tsp
- Baking powder - 1/2 tsp
Steps
- Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and coconut sugar until light and fluffy.
- Add the egg yolk and vanilla extract to the butter mixture and mix until well combined.
- In a separate bowl, whisk together the whole wheat flour, almond flour, baking powder, and sea salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 15 minutes.
- Roll out the chilled dough to about 1/2 inch thick on a floured surface.
- Cut out desired shapes using cookie cutters and place them on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Allow the Sablé Breton to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
