  • Bell pepper (mixed colors) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Vegetable broth - 400 ml
  • Thyme - 1 teaspoon, dried
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced bell pepper, zucchini, and carrot. Cook for 5-7 minutes, until the vegetables are tender.
  5. Add the drained rice to the saucepan and stir to combine with the vegetables.
  6. Pour in the vegetable broth, add the dried thyme, and season with salt and pepper. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes until the rice is cooked and has absorbed the broth.
  8. Remove from heat and gently fold in the green peas and chopped parsley.
  9. Let the dish sit covered for 5 minutes before serving. Fluff the rice with a fork and adjust seasoning if necessary.
