- Garlic - 2 cloves, minced
- Bell pepper (mixed colors) - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Vegetable broth - 400 ml
- Thyme - 1 teaspoon, dried
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced bell pepper, zucchini, and carrot. Cook for 5-7 minutes, until the vegetables are tender.
- Add the drained rice to the saucepan and stir to combine with the vegetables.
- Pour in the vegetable broth, add the dried thyme, and season with salt and pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes until the rice is cooked and has absorbed the broth.
- Remove from heat and gently fold in the green peas and chopped parsley.
- Let the dish sit covered for 5 minutes before serving. Fluff the rice with a fork and adjust seasoning if necessary.
