Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1, diced
  • Green peas - 100 grams (fresh or frozen)
  • Vegetable broth - 400 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced carrot, zucchini, and bell pepper, and cook for 5-7 minutes until the vegetables begin to soften.
  5. Add the rinsed rice to the vegetable mixture and stir for 1-2 minutes to toast the rice slightly.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
  7. Stir in the green peas, chopped parsley, and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until the peas are heated through.
  8. Remove from heat, fluff the rice with a fork, and serve warm garnished with additional parsley if desired.
