- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper (red or yellow) - 1, diced
- Green peas - 100 grams (fresh or frozen)
- Vegetable broth - 400 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced carrot, zucchini, and bell pepper, and cook for 5-7 minutes until the vegetables begin to soften.
- Add the rinsed rice to the vegetable mixture and stir for 1-2 minutes to toast the rice slightly.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
- Stir in the green peas, chopped parsley, and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until the peas are heated through.
- Remove from heat, fluff the rice with a fork, and serve warm garnished with additional parsley if desired.
