Ingredients

  • Basmati rice - 150 grams
  • Chicken broth - 300 ml
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Carrot - 1 medium, diced
  • Green peas - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm chicken broth for about 10 minutes to release their flavor and color.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and garlic, and sauté until translucent, about 3 minutes.
  3. Add the diced carrot and sauté for another 2 minutes until slightly tender.
  4. Rinse the basmati rice under cold water until the water runs clear, then drain.
  5. Add the drained rice to the saucepan, stirring well to coat with the oil and vegetables for about 2 minutes.
  6. Pour in the remaining chicken broth and the saffron-infused broth, then season with salt and black pepper to taste.
  7. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
  8. In the last 5 minutes of cooking, add the green peas to the rice, stirring gently to combine.
  9. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh parsley before serving.
