- Basmati rice - 150 grams
- Chicken broth - 300 ml
- Saffron threads - 0.1 grams
- Olive oil - 2 tablespoons
- Shallot - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Carrot - 1 medium, diced
- Green peas - 50 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm chicken broth for about 10 minutes to release their flavor and color.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and garlic, and sauté until translucent, about 3 minutes.
- Add the diced carrot and sauté for another 2 minutes until slightly tender.
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- Add the drained rice to the saucepan, stirring well to coat with the oil and vegetables for about 2 minutes.
- Pour in the remaining chicken broth and the saffron-infused broth, then season with salt and black pepper to taste.
- Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
- In the last 5 minutes of cooking, add the green peas to the rice, stirring gently to combine.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley before serving.
