Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Vegetable broth - 400 ml
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced carrot, zucchini, and bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  5. Add the rinsed rice to the saucepan, stirring to coat it with the vegetable mixture.
  6. Pour in the vegetable broth, and add the dried thyme, rosemary, salt, and black pepper. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  8. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
