- Yellow onion - 1 small, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Vegetable broth - 400 ml
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced carrot, zucchini, and bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the rinsed rice to the saucepan, stirring to coat it with the vegetable mixture.
- Pour in the vegetable broth, and add the dried thyme, rosemary, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
