- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1/2 teaspoon

- Fresh parsley - 2 tablespoons, chopped
- Lemon zest - from 1 lemon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped shallots, cooking for 2-3 minutes until translucent.
- Add the minced garlic, diced carrot, and red bell pepper to the saucepan, stirring for another 3-4 minutes until the vegetables start to soften.
- Stir in the ground cumin, coriander, turmeric, paprika, salt, and black pepper, cooking for an additional minute to release the spices' aromas.
- Add the drained basmati rice to the saucepan and stir well to coat the rice in the spice mixture.
