  • Bell pepper (red or yellow) - 1 medium, diced
  • Zucchini - 1 small, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3 minutes.
  3. Add the diced carrot, bell pepper, and zucchini to the pan, stirring occasionally for about 5 minutes until the vegetables are slightly tender.
  4. Stir in the rinsed rice, fresh thyme, salt, and pepper, cooking for an additional 2 minutes to toast the rice slightly.
  5. Pour in the vegetable broth, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and stir in the fresh parsley before serving.
