- Zucchini - 1 small, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3 minutes.
- Add the diced carrot, bell pepper, and zucchini to the pan, stirring occasionally for about 5 minutes until the vegetables are slightly tender.
- Stir in the rinsed rice, fresh thyme, salt, and pepper, cooking for an additional 2 minutes to toast the rice slightly.
- Pour in the vegetable broth, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and stir in the fresh parsley before serving.
