- Basmati rice - 150 grams
- Chicken broth - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green peas - 50 grams, frozen or fresh
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for an additional 2-3 minutes until fragrant.
- Stir in the cumin, turmeric, salt, and black pepper, cooking for another minute to release the spices' aromas.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices for about 1-2 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the green peas, cover again, and let it sit for another 5 minutes off the heat.
- Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
