Ingredients

  • Basmati rice - 150 grams
  • Chicken broth - 300 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green peas - 50 grams, frozen or fresh
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot to the pot, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the cumin, turmeric, salt, and black pepper, cooking for another minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices for about 1-2 minutes.
  6. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, add the green peas, cover again, and let it sit for another 5 minutes off the heat.
  8. Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
