Ingredients

  • Black rice - 100g

  • Shrimp - 150g, peeled and deveined
  • Calamari - 100g, sliced into rings
  • Cherry tomatoes - 100g, halved
  • Fish stock - 300ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the black rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and chopped shallot, sauté until translucent.
  3. Add the soaked black rice to the saucepan, stirring to coat it in the oil and vegetables. Toast the rice for 2-3 minutes.
  4. Pour in the fish stock, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. Stir occasionally.
  5. Meanwhile, in a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the shrimp and calamari, and cook for about 3-4 minutes until they are cooked through.
  6. Add the halved cherry tomatoes to the skillet, cooking for an additional 2 minutes until they soften.
  7. Once the rice is cooked, fluff it with a fork and season with salt and black pepper. Stir in the seafood mixture, lemon juice, and chopped parsley.
  8. Serve warm, garnished with additional parsley if desired.
