- Shrimp - 150g, peeled and deveined
- Calamari - 100g, sliced into rings
- Cherry tomatoes - 100g, halved
- Fish stock - 300ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the black rice under cold water until the water runs clear, then soak for 30 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and chopped shallot, sauté until translucent.
- Add the soaked black rice to the saucepan, stirring to coat it in the oil and vegetables. Toast the rice for 2-3 minutes.
- Pour in the fish stock, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. Stir occasionally.
- Meanwhile, in a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the shrimp and calamari, and cook for about 3-4 minutes until they are cooked through.
- Add the halved cherry tomatoes to the skillet, cooking for an additional 2 minutes until they soften.
- Once the rice is cooked, fluff it with a fork and season with salt and black pepper. Stir in the seafood mixture, lemon juice, and chopped parsley.
- Serve warm, garnished with additional parsley if desired.
