Ingredients

  • Black rice - 150 grams
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the black rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the shallot and garlic, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the diced red bell pepper and zucchini to the pan, cooking for another 5 minutes until softened.
  4. Stir in the rinsed black rice, fresh thyme, salt, and black pepper, mixing well with the vegetables.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and let simmer for about 30 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  7. Garnish with chopped fresh parsley and serve warm.
