- Black rice - 150 grams
- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Shallot - 1, finely chopped
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, fresh or dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the black rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the shallot and garlic, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the diced red bell pepper and zucchini to the pan, cooking for another 5 minutes until softened.
- Stir in the rinsed black rice, fresh thyme, salt, and black pepper, mixing well with the vegetables.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and let simmer for about 30 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh parsley and serve warm.
