  • Chicken broth - 200 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish, chopped

Steps

  1. Prepare the cauliflower rice by grating the cauliflower florets or pulsing them in a food processor until they resemble rice grains.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.
  4. Stir in the diced bell pepper, paprika, cumin, salt, and black pepper. Cook for an additional 3 minutes until the peppers are slightly softened.
  5. Add the tomato paste and chicken broth to the skillet, mixing well to combine. Bring to a gentle simmer.
  6. Fold in the cauliflower rice, mixing thoroughly to combine with the meat mixture. Cover and cook for 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  7. Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh parsley.
