Ingredients

  • Arborio rice - 150 grams
  • Vegetable broth - 500 milliliters
  • Fresh black truffle - 20 grams (or truffle oil - 1 tablespoon)
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a separate large skillet, heat the olive oil over medium heat. Add the finely chopped shallot and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute, being careful not to burn it.
  4. Stir in the Arborio rice, coating it well in the oil and cooking for 2-3 minutes until the rice is slightly translucent.
  5. Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the broth before adding the next ladle. Continue this process for about 18-20 minutes until the rice is al dente.
  6. Once the rice is cooked, remove from heat and stir in the finely grated fresh black truffle (or truffle oil).
  7. Season with salt and black pepper to taste, and fold in the chopped parsley.
  8. Serve immediately, garnished with additional truffle shavings if desired.
