- Arborio rice - 150 grams
- Vegetable broth - 500 milliliters
- Fresh black truffle - 20 grams (or truffle oil - 1 tablespoon)
- Shallot - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a separate large skillet, heat the olive oil over medium heat. Add the finely chopped shallot and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute, being careful not to burn it.
- Stir in the Arborio rice, coating it well in the oil and cooking for 2-3 minutes until the rice is slightly translucent.
- Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the broth before adding the next ladle. Continue this process for about 18-20 minutes until the rice is al dente.
- Once the rice is cooked, remove from heat and stir in the finely grated fresh black truffle (or truffle oil).
- Season with salt and black pepper to taste, and fold in the chopped parsley.
- Serve immediately, garnished with additional truffle shavings if desired.
