- Vegetable broth - 500 milliliters
- Olive oil - 2 tablespoons
- Fresh basil - 5 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomatoes, salt, black pepper, and bay leaf. Cook for 5-7 minutes until the tomatoes begin to break down.
- Add the rice to the tomato mixture, stirring to coat the grains with the sauce.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the saucepan.
- Simmer for 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Remove the bay leaf before serving.
- Stir in the chopped fresh basil, adjust seasoning if needed, and serve hot.
