  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Fresh basil - 5 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced tomatoes, salt, black pepper, and bay leaf. Cook for 5-7 minutes until the tomatoes begin to break down.
  4. Add the rice to the tomato mixture, stirring to coat the grains with the sauce.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the saucepan.
  6. Simmer for 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Remove the bay leaf before serving.
  7. Stir in the chopped fresh basil, adjust seasoning if needed, and serve hot.
