Ingredients

  • Long-grain rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper (red or yellow) - 1, diced
  • Zucchini - 1 medium, diced
  • Eggplant - 100 grams, diced
  • Tomato - 1 large, diced
  • Dried herbes de Provence - 1 teaspoon
  • Vegetable broth - 400 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a few leaves for garnish

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat and add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-5 minutes.
  3. Add the diced bell pepper, zucchini, and eggplant to the pan. Cook for another 5-7 minutes until the vegetables begin to soften.
  4. Stir in the diced tomato, herbes de Provence, salt, and pepper. Cook for an additional 3-4 minutes until the tomato breaks down slightly.
  5. Add the rinsed rice to the vegetable mixture and stir well to combine all ingredients.
  6. Pour in the vegetable broth, bring to a simmer, then cover the saucepan with a lid and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  8. Serve hot, garnished with fresh basil leaves.
