- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Yellow onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Diced tomatoes - 200 grams (canned or fresh)
- Vegetable broth - 400 milliliters
- Fresh thyme - 1 teaspoon, chopped
- Fresh basil - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté for 2-3 minutes until softened.
- Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables are tender.
- Add the diced tomatoes, thyme, salt, and black pepper to the pan, and mix well.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the rice, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat, stir in the fresh basil, and let it sit for 5 minutes before serving.
