Ingredients

  • Long-grain rice - 150 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Yellow onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Diced tomatoes - 200 grams (canned or fresh)
  • Vegetable broth - 400 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh basil - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until softened.
  3. Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables are tender.
  4. Add the diced tomatoes, thyme, salt, and black pepper to the pan, and mix well.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, add the rice, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat, stir in the fresh basil, and let it sit for 5 minutes before serving.
