- Arborio rice - 150 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Granny Smith apple - 1 medium, peeled and diced
- Heavy cream - 100 ml
- Camembert cheese - 100 grams, diced
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a separate large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped thyme to the onions, cooking for an additional 1-2 minutes until fragrant.
- Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
- Gradually add the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more broth. Continue until the rice is creamy and al dente, about 18-20 minutes.
- In the last 5 minutes of cooking, fold in the diced apple and heavy cream, stirring gently to combine.
- Once cooked, remove from heat and mix in the diced Camembert cheese until melted and creamy.
- Season with salt and black pepper to taste. Let it sit for a couple of minutes before serving.
- Serve garnished with fresh parsley.
