  • Green bell pepper - 1 medium, diced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chives - for garnish, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the diced carrot and green bell pepper to the pan and cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the rice, allowing it to toast for 1-2 minutes while mixing with the vegetables.
  4. Pour in the water, Dijon mustard, chopped thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
  6. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Adjust seasoning if needed.
