- Green bell pepper - 1 medium, diced
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Chives - for garnish, chopped
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and green bell pepper to the pan and cook for an additional 5 minutes, stirring occasionally.
- Stir in the rice, allowing it to toast for 1-2 minutes while mixing with the vegetables.
- Pour in the water, Dijon mustard, chopped thyme, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork. Adjust seasoning if needed.
- Serve warm, garnished with chopped chives.
