- Basmati rice - 150 grams
- Water - 400 milliliters
- Fresh mint leaves - 30 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, water, salt, and a splash of olive oil. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the mint sauce. In a small bowl, combine the minced garlic, chopped mint leaves, lemon juice, remaining olive oil, salt, and pepper. Mix well.
- Once the rice is done, fluff it with a fork and gently fold in the mint sauce until combined.
