Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Fresh mint leaves - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, water, salt, and a splash of olive oil. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, prepare the mint sauce. In a small bowl, combine the minced garlic, chopped mint leaves, lemon juice, remaining olive oil, salt, and pepper. Mix well.
  5. Once the rice is done, fluff it with a fork and gently fold in the mint sauce until combined.
  6. Serve warm, garnished with additional fresh mint leaves if desired.
