Ingredients

  • Brown rice - 150 grams
  • Low-fat cream - 100 ml
  • Vegetable broth - 500 ml
  • Shallots - 2, finely chopped
  • Garlic - 1 clove, minced
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat and add the chopped shallots and minced garlic. Sauté for 2-3 minutes until they become translucent.
  2. Add the brown rice to the saucepan and stir for another 2 minutes to toast the rice slightly.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 25 minutes, or until the rice is tender and has absorbed most of the liquid.
  4. Once the rice is cooked, stir in the low-fat cream and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and the cream is heated through.
  5. Remove from heat, stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
  6. Serve hot, garnished with chopped fresh parsley.
