- Jasmine rice - 150 grams
- Vegetable broth - 400 milliliters
- Lemongrass stalk - 1 (about 15 cm, finely chopped)
- Garlic - 2 cloves (minced)
- Red onion - 1 small (finely chopped)
- Carrot - 1 medium (diced)
- Bell pepper - 1 medium (diced)
- Green peas - 100 grams (fresh or frozen)
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful (for garnish)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped red onion, sautéing until the onion becomes translucent.
- Stir in the diced carrot and bell pepper, cooking for another 3-4 minutes until they begin to soften.
- Add the chopped lemongrass and rice to the saucepan, stirring for about 2 minutes until the rice is slightly toasted.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
- After 15 minutes, remove the lid and add the green peas, soy sauce, salt, and black pepper. Stir gently, cover again, and cook for an additional 5 minutes.
- Remove from heat and let it rest for 5 minutes before fluffing the rice with a fork. Serve garnished with fresh cilantro.
