  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken broth - 200 milliliters
  • Almonds - 30 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Start by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, cut it into florets, and pulse in a food processor until it resembles rice grains.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, cumin, cinnamon, turmeric, salt, and black pepper to the skillet. Cook for an additional 1-2 minutes until fragrant.
  4. Cut the chicken breast into bite-sized pieces and add it to the skillet. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  5. Stir in the cauliflower rice and pour in the chicken broth. Mix well and cover the skillet with a lid. Allow it to simmer for 10 minutes, stirring occasionally, until the cauliflower is tender.
  6. Meanwhile, toast the sliced almonds in a dry pan over medium heat until golden brown, about 2-3 minutes. Watch carefully to prevent burning.
  7. Once the cauliflower rice is cooked, remove the skillet from heat. Fluff the rice with a fork and stir in the chopped parsley.
